Leading the list: Maya's in Public, which has been entirely rethought for the season. The pan-Asian menu has been refined, and the decor by a Vieux-Nice decorator brings genuine Mediterranean elegance to the Caribbean.

Our advice
High season (December to February) remains the emblematic experience of Saint-Barth, but our most discerning travellers now prefer May and November. Perfect light, reduced crowds, more accessible prices, and the same human experience at the table as on the beach.
